- 1 cup butter, softened
- 1 cup sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 2 tablespoons orange juice
- 1 teaspoon grated orange zest
- 2-1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups chopped fresh or frozen cranberries
- 1/2 cup chopped walnuts
- 1-1/2 cups confectioners' sugar
- 2 tablespoons orange juice
- 1/2 teaspoon grated orange zest
Method
- In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, orange juice and zest. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. Stir in cranberries and walnuts.
- Drop by tablespoonfuls 2 in. apart onto greased
- . Bake at 375° for 12-14 minutes or until edges are lightly browned. Remove to wire racks to cool.
- Combine icing ingredients; spread over cooled cookies.
