Ingredients

  • 2 c. cracklings
  • 2 tsp. salt
  • 2 c. boiling water
  • about 1 2/3 c. cornmeal

Method

  • Place
  • cracklings in heavy boiler and stir while cracklings heat.
  • Sprinkle
  • salt
  • on
  • them
  • and stir again.
  • Pour 2 cups boiling
  • water
  • over cracklings.
  • Reduce heat and simmer for about 3
  • to 5 minutes.
  • Gradually add finely ground cornmeal, while mixture
  • is
  • still
  • on stove.
  • Stir until a stiff batter is formed.
  • Drop from large spoon onto lightly greased cookie sheet. Bake
  • in
  • a 450° oven until well browned (20 to 30 minutes).
