Ingredients
- 2 c. cracklings
- 2 tsp. salt
- 2 c. boiling water
- about 1 2/3 c. cornmeal
Method
- Place
- cracklings in heavy boiler and stir while cracklings heat.
- Sprinkle
- salt
- on
- them
- and stir again.
- Pour 2 cups boiling
- water
- over cracklings.
- Reduce heat and simmer for about 3
- to 5 minutes.
- Gradually add finely ground cornmeal, while mixture
- is
- still
- on stove.
- Stir until a stiff batter is formed.
- Drop from large spoon onto lightly greased cookie sheet. Bake
- in
- a 450° oven until well browned (20 to 30 minutes).
