Ingredients
- 1 c. buttermilk
- 2 eggs, well beaten
- 1/4 c. bacon drippings
- 2 c. cornmeal
- 1 c. sifted flour
- 3 tsp. baking powder
- 3 Tbsp. sugar
- 1 tsp. soda
- 1 1/2 tsp. salt
- 1/2 lb. bacon, fried and crumbled
Method
- Preheat oven to 425°. Stir buttermilk into beaten eggs.
- Add 1/4 cup bacon drippings. Combine all dry ingredients.
- Add to liquid ingredients all at once, then sprinkle the crumbled bacon into the batter. Beat well and pour into a large pan (9 x 12-inch) or heavy iron skillet (12-inch); bake until golden brown in the hot oven. Cut into wedges or squares and serve hot.
