Ingredients

  • 1 c. buttermilk
  • 2 eggs, well beaten
  • 1/4 c. bacon drippings
  • 2 c. cornmeal
  • 1 c. sifted flour
  • 3 tsp. baking powder
  • 3 Tbsp. sugar
  • 1 tsp. soda
  • 1 1/2 tsp. salt
  • 1/2 lb. bacon, fried and crumbled

Method

  • Preheat oven to 425°. Stir buttermilk into beaten eggs.
  • Add 1/4 cup bacon drippings. Combine all dry ingredients.
  • Add to liquid ingredients all at once, then sprinkle the crumbled bacon into the batter. Beat well and pour into a large pan (9 x 12-inch) or heavy iron skillet (12-inch); bake until golden brown in the hot oven. Cut into wedges or squares and serve hot.
