Ingredients

  • 1 lb. crab meat (2 c.)
  • 1 tsp. grated cheese
  • onion
  • 2 tsp. Worcestershire sauce
  • juice of 1/2 lemon (large)
  • 5 saltines, crumbled (use more to stiffen)
  • 1/2 c. mayonnaise
  • 1/4 tsp. cayenne pepper
  • 2 Tbsp. butter
  • 3 Tbsp. flour (heaping)
  • 1 egg, beaten
  • 1 c. milk

Method

  • Make white sauce using butter, flour and milk.
  • Let cool.
  • Add egg, mayonnaise, salt, pepper to taste, chives, Worcestershire sauce, lemon juice and cayenne pepper.
  • Add crumbs; fold in crab meat carefully.
  • Make cakes and brown in shortening.
  • If put in casserole, make white sauce thinner or double number of cracker crumbs.
  • Bake casserole 20 to 30 minutes at 400°.
  • Dip made same as casserole.
