Ingredients

  • 1 Tbsp. olive oil
  • 1/3 c. chopped onions
  • 1/2 c. sweet red peppers, cut in cubes
  • 1 1/4 c. boiling water
  • 1/3 c. raisins
  • 1/8 tsp. ground cinnamon
  • 1/4 tsp. ground cumin
  • 1/2 tsp. grated orange rind
  • salt and fresh ground pepper
  • 1 c. quick couscous
  • 1 Tbsp. butter

Method

  • In a saucepan with tight fitting lid, heat olive oil.
  • Add onions and red peppers.
  • Stir until wilted, not brown.
  • Add water, raisins and spices.
  • Remove from heat and add couscous.
  • Stir well.
  • Cover and let stand 5 minutes.
  • Uncover.
  • Add butter and fluff.
