- 1 Tbsp. olive oil
- 1/3 c. chopped onions
- 1/2 c. sweet red peppers, cut in cubes
- 1 1/4 c. boiling water
- 1/3 c. raisins
- 1/8 tsp. ground cinnamon
- 1/4 tsp. ground cumin
- 1/2 tsp. grated orange rind
- salt and fresh ground pepper
- 1 c. quick couscous
- 1 Tbsp. butter
Method
- In a saucepan with tight fitting lid, heat olive oil.
- Add onions and red peppers.
- Stir until wilted, not brown.
- Add water, raisins and spices.
- Remove from heat and add couscous.
- Stir well.
- Cover and let stand 5 minutes.
- Uncover.
- Add butter and fluff.
