Ingredients

  • 14 cup olive oil
  • 2 yellow squash, cut into 1-inch chunks
  • 1 zucchini, cut into 1-inch chunks
  • 1 onion, cut into 1/4-inch slices
  • 4 pork loin chops (about 1-inch thick, 1 1/2 lbs total)
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 12 lb mushroom, quartered
  • 28 ounces spaghetti sauce
  • 1 teaspoon dried oregano

Method

  • In a large skillet, heat oil over medium-high heat.
  • Add yellow squash, zucchini, and onion.
  • Cook 4 to 6 minutes, or until vegetables are tender, stirring occasionally.
  • Transfer vegetables to a bowl and set aside.
  • Season pork chops with salt and pepper.
  • In the same skillet, brown pork chops over medium-high heat about 2 minutes on each side.
  • Return vegetables to the skillet, reduce heat to low, and stir in mushrooms, spaghetti sauce, and oregano.
  • Cover and cook 30 to 35 minutes, or until pork chops are cooked through.
