Ingredients

  • 1 (3 oz.) pkg. lemon Jell-O
  • 1/2 c. whipping cream
  • 1/2 c. mayonnaise
  • 1 can corned beef
  • 1 c. finely chopped celery
  • 3 hard-boiled eggs
  • 1 Tbsp. chopped green pepper
  • 1 tsp. chopped onion

Method

  • Blend 1 cup boiling water in lemon Jell-O; cool until slightly thick. Whip 1/2 cup of whipping cream; blend with mayonnaise. Add to Jell-O and whip until well blended. Add 1 cup shredded corned beef; mix well. Add remaining ingredients. Pour into salad mold and refrigerate overnight.
