Ingredients
- 1 (3 oz.) pkg. lemon Jell-O
- 1/2 c. whipping cream
- 1/2 c. mayonnaise
- 1 can corned beef
- 1 c. finely chopped celery
- 3 hard-boiled eggs
- 1 Tbsp. chopped green pepper
- 1 tsp. chopped onion
Method
- Blend 1 cup boiling water in lemon Jell-O; cool until slightly thick. Whip 1/2 cup of whipping cream; blend with mayonnaise. Add to Jell-O and whip until well blended. Add 1 cup shredded corned beef; mix well. Add remaining ingredients. Pour into salad mold and refrigerate overnight.
