Ingredients
- 4 eggs
- 2 c. fresh corn (canned or frozen)
- 3 tsp. flour
- 1 tsp. melted butter or margarine
- 1 tsp. sugar
- 1 tsp. salt
- dash of pepper
- 1 c. milk or light cream
Method
- Beat eggs until thick; add corn.
- Combine flour, sugar, salt and pepper.
- Slowly stir in milk or cream and blend in butter. Combine with corn mixture (mix well).
- Pour into greased 1 1/2-quart casserole dish.
- Bake at 325° for 1 hour and 20 minutes. Pudding is done when knife is inserted in center and it comes out clean.
