Ingredients

  • 4 eggs
  • 2 c. fresh corn (canned or frozen)
  • 3 tsp. flour
  • 1 tsp. melted butter or margarine
  • 1 tsp. sugar
  • 1 tsp. salt
  • dash of pepper
  • 1 c. milk or light cream

Method

  • Beat eggs until thick; add corn.
  • Combine flour, sugar, salt and pepper.
  • Slowly stir in milk or cream and blend in butter. Combine with corn mixture (mix well).
  • Pour into greased 1 1/2-quart casserole dish.
  • Bake at 325° for 1 hour and 20 minutes. Pudding is done when knife is inserted in center and it comes out clean.
