Ingredients

  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 4 Tbsp. sugar
  • 2 eggs, beaten
  • 1 c. milk
  • 4 Tbsp. melted butter
  • 1 c. white kernel corn, drained
  • oil for frying
  • powdered sugar

Method

  • Heat oil to 350°, 3-inches deep.
  • Mix dry ingredients. Combine eggs, milk and butter; mix together with dry ingredients. Add corn and stir to combine.
  • Drop by tablespoonfuls into hot oil.
  • Deep fry about 5 minutes or until brown.
  • Sprinkle with powdered sugar and serve warm.
