Ingredients

  • 8 c. Southern-style cornbread
  • 4 c. rice, cooked
  • 1 small onion, diced fine
  • 1 c. celery, diced fine
  • 4 eggs, boiled and chopped
  • 1 stick butter
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. poultry seasoning
  • 1 can cream of chicken soup
  • 4 to 6 c. turkey or chicken broth

Method

  • Combine celery, onion and butter in microwave-safe dish. Microwave for 2 to 3 minutes on High.
  • In large bowl mix all ingredients together.
  • Pour in large baking dish sprayed with Pam. Bake at 350° for 30 to 45 minutes.
  • Dressing should be lightly browned.
  • Serve immediately.
