Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1/4 tsp. salt
  • 3 eggs
  • 1 stick butter, melted
  • 1 (15.25 oz.) can whole kernel corn
  • 1 (15.25 oz.) can creamed corn
  • 1 1/2 c. cheese, shredded

Method

  • In a pan, melt butter. Add onion, green pepper and salt; saute. Mix corn, eggs, muffin mix and 1 cup of cheese. Add the sauteed onions and peppers. Put in an 8 x 8-inch casserole dish. Bake at 350° for 40 minutes. Sprinkle with remaining cheese.
