Ingredients

  • 1 c. spinach, torn and blanched
  • 1 c. whole kernel corn, drained
  • 1/4 c. shredded carrots
  • 1/3 c. Mozzarella cheese, shredded
  • 2 egg whites
  • 1 Tbsp. cornstarch
  • 1 clove garlic, minced
  • 2 Tbsp. olive or canola oil
  • salt and pepper to taste
  • parsley or chives for garnish

Method

  • Mix spinach, corn, carrots, cheese, egg whites, cornstarch and garlic.
  • Heat oil and drop mixture by well rounded tablespoons into oil.
  • Flatten gently with spatula.
  • Cook until crispy and brown, about 3 minutes on each side.
  • Garnish with parsley or chives.
