- 1 c. spinach, torn and blanched
- 1 c. whole kernel corn, drained
- 1/4 c. shredded carrots
- 1/3 c. Mozzarella cheese, shredded
- 2 egg whites
- 1 Tbsp. cornstarch
- 1 clove garlic, minced
- 2 Tbsp. olive or canola oil
- salt and pepper to taste
- parsley or chives for garnish
Method
- Mix spinach, corn, carrots, cheese, egg whites, cornstarch and garlic.
- Heat oil and drop mixture by well rounded tablespoons into oil.
- Flatten gently with spatula.
- Cook until crispy and brown, about 3 minutes on each side.
- Garnish with parsley or chives.
