Ingredients
- 2 c. fresh or frozen corn
- 1/2 c. diced bell pepper
- 1/8 tsp. minced garlic
- 1/4 tsp. cumin
- 2 Tbsp. olive oil
- 2 scallions, sliced thin
- 1 Tbsp. lemon juice (fresh)
- salt and pepper
Method
- In a large skillet saute corn, bell pepper, garlic and cumin in oil over low to moderate heat for 3 minutes.
- Season with salt and pepper to taste.
- Add scallions and stir for 30 seconds.
- Transfer to a bowl and add lemon juice and toss.
- Serve at room temperature.
