- 2 c. flour
- 1 1/2 c. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. oil
- 7 egg yolks
- 3/4 c. cold water
- 2 tsp. vanilla
- 2 tsp. grated lemon rind
- 1 c. egg whites
- 1/2 tsp. cream of tartar
Method
- Sift into the first bowl the flour, sugar, baking powder and salt.
- Make a well and add oil, egg yolks, water, vanilla and lemon rind.
- Mix well.
- In a large bowl, beat egg whites and cream of tartar until stiff peaks form.
- Pour yolk mix slowly over whites, blending carefully with a spatula.
- Pour into ungreased tube pan and bake 55 minutes.
- Increase to 350° for 10 to 15 minutes more.
- Cool over bottle upside down.
