- 1 c. sifted flour
- 4 tsp. baking powder
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. sugar
- 1 tsp. thyme
- 1 tsp. sage
- 1 tsp. marjoram
- 1 1/2 c. onions
- 1 1/2 c. chopped celery
- 1 tsp. chopped green pepper
- 1 tsp. chopped pimento
- 1/4 c. shortening
- 3 eggs, beaten
- 1 c. milk
Method
- Sift together flour, baking powder, salt, pepper, sugar, thyme, sage and marjoram.
- Add corn meal and stir to blend.
- Saute onions, celery, green pepper and pimento in shortening.
- To flour mixture, add sauteed vegetables with shortening, eggs and milk.
- Stir until well blended.
- Pour into well-greased 9-inch square pan.
- Bake in hot 400° oven for 30 minutes.
