Ingredients

  • 1 c. sifted flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. sugar
  • 1 tsp. thyme
  • 1 tsp. sage
  • 1 tsp. marjoram
  • 1 1/2 c. onions
  • 1 1/2 c. chopped celery
  • 1 tsp. chopped green pepper
  • 1 tsp. chopped pimento
  • 1/4 c. shortening
  • 3 eggs, beaten
  • 1 c. milk

Method

  • Sift together flour, baking powder, salt, pepper, sugar, thyme, sage and marjoram.
  • Add corn meal and stir to blend.
  • Saute onions, celery, green pepper and pimento in shortening.
  • To flour mixture, add sauteed vegetables with shortening, eggs and milk.
  • Stir until well blended.
  • Pour into well-greased 9-inch square pan.
  • Bake in hot 400° oven for 30 minutes.
