Ingredients

  • 10 potatoes, boiled
  • salt and pepper
  • 1 (16 oz.) cream cheese, softened
  • 2 eggs, beaten lightly
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. minced fresh parsley
  • 2 Tbsp. minced chives and/or 1 small onion, grated
  • 1 (3 1/2 oz.) can French fried onions

Method

  • Drain potatoes.
  • Beat until smooth.
  • Add salt and pepper, then cream cheese and beat again.
  • Blend in onion, eggs, flour and parsley and beat again.
  • Turn into buttered casserole dish. Spread crushed onion over top and bake at 325°
  • for 30 minutes.
