Ingredients
- 10 potatoes, boiled
- salt and pepper
- 1 (16 oz.) cream cheese, softened
- 2 eggs, beaten lightly
- 2 Tbsp. all-purpose flour
- 2 Tbsp. minced fresh parsley
- 2 Tbsp. minced chives and/or 1 small onion, grated
- 1 (3 1/2 oz.) can French fried onions
Method
- Drain potatoes.
- Beat until smooth.
- Add salt and pepper, then cream cheese and beat again.
- Blend in onion, eggs, flour and parsley and beat again.
- Turn into buttered casserole dish. Spread crushed onion over top and bake at 325°
- for 30 minutes.
