Ingredients

  • 1 (8 oz.) pkg. cream cheese, softened
  • 2 eggs, beaten
  • 3/4 c. sugar
  • 2 (3 1/2 oz. each) pkg. instant vanilla pudding mix
  • 3/4 c. milk
  • 2 c. mashed sweet potatoes, cooked
  • 1 1/2 c. Cool Whip
  • 1/2 c. chopped nuts
  • 2 (9-inch) graham cracker pie crusts
  • dash of cinnamon

Method

  • Mix together well the cream cheese and beaten eggs.
  • Add sugar and beat until fluffy.
  • Spread mixture into crusts and bake for 20 minutes at 350°.
  • Let cool.
  • Meanwhile, mix pudding with the milk. Fold in potatoes, cinnamon and Cool Whip.
  • Blend well.
