Ingredients

  • 1/2 c. chopped onions
  • 1 large clove garlic, finely chopped
  • 2 Tbsp. olive oil
  • 1 can (16 oz.) whole tomatoes, undrained
  • 1 can (16 oz.) tomato sauce
  • 1/2 tsp. dried marjoram leaves
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves
  • 1/4 tsp. salt
  • dash of red pepper
  • 2 c. cooked crabmeat or 1/2-inch pieces imitation crab
  • 1/2 c. Feta cheese
  • 3 oz. cream cheese

Method

  • Cook and stir onion and garlic in oil in 3-quart saucepan until onion is tender.
  • Stir in next 7 ingredients.
  • Heat to boiling. Reduce heat.
  • Cover and simmer 45 minutes.
  • Make Lemon Oven Rice. Stir crabmeat and cheese into tomato mixture.
  • Spoon over baked rice.
  • Bake, uncovered, at 350° for 20 minutes more.
  • Garnish with parsley.
  • Yields 6 servings.
