Ingredients

  • 40 Ritz crackers
  • 1 1/2 c. white sugar
  • 4 eggs
  • 2 tsp. baking powder
  • 1 c. chopped nuts
  • 2 tsp. vanilla
  • 1 large Cool Whip
  • 1 (8 oz.) cream cheese
  • 1/2 c. powdered sugar
  • 1 large can crushed pineapple

Method

  • Grease 10 x 13-inch pan.
  • Crush crackers; mix with nuts and baking powder.
  • Beat egg whites with white sugar and vanilla. Fold cracker mixture into egg whites.
  • Bake at 300° for 40 minutes; cool completely.
  • Mix Cool Whip and softened cream cheese, powdered sugar and drained pineapple.
  • Spread on cake. Refrigerate overnight.
