Ingredients
- 40 Ritz crackers
- 1 1/2 c. white sugar
- 4 eggs
- 2 tsp. baking powder
- 1 c. chopped nuts
- 2 tsp. vanilla
- 1 large Cool Whip
- 1 (8 oz.) cream cheese
- 1/2 c. powdered sugar
- 1 large can crushed pineapple
Method
- Grease 10 x 13-inch pan.
- Crush crackers; mix with nuts and baking powder.
- Beat egg whites with white sugar and vanilla. Fold cracker mixture into egg whites.
- Bake at 300° for 40 minutes; cool completely.
- Mix Cool Whip and softened cream cheese, powdered sugar and drained pineapple.
- Spread on cake. Refrigerate overnight.
