  • 2 cans Niblets corn, drained
  • 2 medium tomatoes (firm), seeded and diced
  • 1 red pepper, diced

  • 1/2 c. Swiss cheese, diced
  • 1/2 c. fresh Parmesan cheese, grated
  • 1 small can diced green chiles
  • 1/4 c. fresh cilantro, chopped or to taste
  • 1/4 c. light olive oil
  • 1 head cauliflower, broken into flowerets
  • 4 celery stalks, sliced
  • 6 carrots, sliced
  • 2 green peppers, sliced
  • 1 can artichoke hearts
  • 1 (8 oz.) can button mushrooms
  • 1 (7 oz.) jar cocktail onions
  • 1 can pitted black olives
