- 2 medium tomatoes (firm), seeded and diced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 red onion, diced
- 1/2 c. Swiss cheese, diced
- 1/2 c. fresh Parmesan cheese, grated
- 1 small can diced green chiles
- 1/4 c. fresh cilantro, chopped or to taste
- 1/4 c. light olive oil
- 1 head cauliflower, broken into flowerets
- 4 celery stalks, sliced
- 6 carrots, sliced
- 2 green peppers, sliced
- 1 can artichoke hearts
- 1 (8 oz.) can button mushrooms
- 1 (7 oz.) jar cocktail onions
- 1 can pitted black olives
