Ingredients
- 1 fresh coconut, grated
- 1 can evaporated milk
- 1/2 can water
- 1 c. sugar
- 4 egg yolks (keep whites)
- 2 tsp. cornstarch
- 1 pie shell, cooked
Method
- Separate eggs; reserve about 1/4 cup coconut.
- Whip egg whites.
- Combine all other ingredients; cook over low heat until thickened; pour into pie shell.
- Top with egg whites; sprinkle with 1/4 cup coconut.
- Brown on broil for about 2 minutes.
