Ingredients
- 3 egg yolks
- 1 Tbsp. cornstarch
- 1 Tbsp. oleo
- 1/2 c. sugar
- 1 pt. sweet milk
- 1 1/2 c. flaked coconut
- 2 Tbsp. flour
- 1 tsp. vanilla
- pinch of salt
Method
- Beat eggs with mixer until foamy.
- Add sugar, flour and cornstarch.
- Slowly add milk.
- Cook until thick.
- Remove from heat; add salt, vanilla, oleo and coconut.
- Return to heat; cook until coconut, salt and vanilla are hot and mixed well with pie filling.
- Pour in 9 or 9 5/8-inch baked pie crust.
- Top with meringue.
- Bake until golden brown.
