Ingredients
- 1 1/4 cup sugar
- 1 1/3 cup coconut milk
- 4 tbsp lemon juice
- 1 cup heavy whipping cream, whipped to stiff peaks
- 2 tbsp desiccated coconut
- 1 tbsp powdered sugar
- None None fresh fruit, to serve
Method
- Place the sugar and 1 cup water in a saucepan and simmer for 5-10 mins, until thickened. Allow to cool. Stir in the coconut milk and lemon juice. Fold in the cream. Freeze overnight.
- Scoop into balls and sprinkle with the coconut and powdered sugar. Serve with fresh fruit.
