Ingredients

  • 1 (8 oz.) can unsweetened pineapple tidbits (undrained)
  • 2 Tbsp. brown sugar
  • 2 tsp. cornstarch
  • 1 1/2 tsp. margarine
  • 1/8 tsp. ground nutmeg
  • 1 Tbsp. water
  • 3 Tbsp. raisins (optional)
  • 1/4 tsp. cinnamon
  • 1/2 tsp. vanilla

Method

  • Combine juice, sugar, water and cornstarch in saucepan.
  • Stir well.
  • Cook until thickened.
  • Stir in pineapple, raisins, margarine, cinnamon and nutmeg.
  • Cook over low heat, stirring until heated.
  • Stir in vanilla.
  • Place 1/2 cup or so of ice cream in dessert dish.
  • Spoon 3 tablespoons warm pineapple sauce over ice cream.
  • Sprinkle with 1 teaspoon toasted coconut, if deserved. Serve immediately.
