Ingredients
- 1 (8 oz.) can unsweetened pineapple tidbits (undrained)
- 2 Tbsp. brown sugar
- 2 tsp. cornstarch
- 1 1/2 tsp. margarine
- 1/8 tsp. ground nutmeg
- 1 Tbsp. water
- 3 Tbsp. raisins (optional)
- 1/4 tsp. cinnamon
- 1/2 tsp. vanilla
Method
- Combine juice, sugar, water and cornstarch in saucepan.
- Stir well.
- Cook until thickened.
- Stir in pineapple, raisins, margarine, cinnamon and nutmeg.
- Cook over low heat, stirring until heated.
- Stir in vanilla.
- Place 1/2 cup or so of ice cream in dessert dish.
- Spoon 3 tablespoons warm pineapple sauce over ice cream.
- Sprinkle with 1 teaspoon toasted coconut, if deserved. Serve immediately.
