Ingredients
- 1/4 c. cornstarch
- 2/3 c. sugar
- 1/2 tsp. salt
- 2 1/2 c. milk
- 3 eggs, separated
- 1 tsp. vanilla
- 1 c. coconut
- 6 Tbsp. sugar
Method
- Mix dry ingredients with milk.
- Cook over boiling water.
- Stir continuously until thick. Cover and cook 10 minutes.
- Stir in hot mixture and egg yolks.
- Cook 2 minutes. Stir in coconut and vanilla. Cool to room temperature.
- Beat egg whites.
- Add sugar. Beat until fluffy.
