Ingredients

  • 1 cauliflower crust (recipe below)
  • 2 chicken thighs
  • 1 strips of bacon, diced slightly undercooked
  • 1/4 red onion, sliced
  • 3 tbsp butter
  • 1/2 cup hot sauce
  • 1/2 cup mozzarella, shredded (or more to taste)
  • 1/4 cup crumbled blue cheese
  • 2 tbsp tomato paste
  • Pinch of salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Red pepper flakes
  • Cauliflower Pizza Crust
  • 1 head of cauliflower, medium, riced*
  • 1 1/4 cup mozzarella cheese
  • 3 tbsp cup pecorino romano cheese
  • 1 eggs
  • 1 tsp oregano
  • 1/2 tsp Sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Method

  • Preheat oven to 450F
  • 1. Cook cauliflower rice for 10 minutes until soft
  • 2. Drain well, cool and transfer to a tea towel
  • 3. Squeeze out as much water as possible
  • 4. In a bowl, combine the cauliflower and remaining ingredients
  • 5. Spread out and press down onto a parchment paper lined pan to 1/2-3/4 thickness - approx. 10" round
  • 6. Bake for 20 minutes or until golden brown
  • 7. Meanwhile saute onions and chicken in butter until cooked
  • 8. Add the hot sauce and simmer while crust cooks
  • 9. Remove crust from oven & top with a thin layer of tomato paste
  • 10. Top with mozzarella, chicken including sauce, onions, crumbled blue cheese & bacon pieces
  • 11. Return pizza to oven and bake another 10 minutes - you can broil for an additional few minutes
