Ingredients

  • 1 large chicken
  • 2 c. green butter beans
  • 4 c. tomatoes
  • 2 large onions, diced
  • 4 medium potatoes, diced
  • 4 c. whole kernel corn
  • 2 tsp. salt
  • 1/2 tsp. white pepper
  • 1 Tbsp. sugar

Method

  • Cut chicken in eight pieces and simmer 2 1/4 hours in 1 gallon of water or until chicken is tender.
  • Remove chicken. Add beans, tomatoes, onions and potatoes to broth.
  • Simmer until beans are tender, about 1 hour.
  • Add hot water, if necessary, and stir to prevent scorching. Add corn and chicken, boned and diced,
  • and seasonings; cook until corn is done. Serves 8 to 10.
  • Better the day after being prepared.
