Ingredients
- 1 large chicken
- 2 c. green butter beans
- 4 c. tomatoes
- 2 large onions, diced
- 4 medium potatoes, diced
- 4 c. whole kernel corn
- 2 tsp. salt
- 1/2 tsp. white pepper
- 1 Tbsp. sugar
Method
- Cut chicken in eight pieces and simmer 2 1/4 hours in 1 gallon of water or until chicken is tender.
- Remove chicken. Add beans, tomatoes, onions and potatoes to broth.
- Simmer until beans are tender, about 1 hour.
- Add hot water, if necessary, and stir to prevent scorching. Add corn and chicken, boned and diced,
- and seasonings; cook until corn is done. Serves 8 to 10.
- Better the day after being prepared.
