- 1 1/2 gal. green tomatoes, chopped
- 1 1/2 qt. onion, chopped
- 1 c. red pepper, chopped
- 2 c. salt
- 1 Tbsp. black pepper
- 2 qt. red vinegar
- 1 gal. white head cabbage, chopped
- 2 c. hot green pepper, chopped
- 1/2 c. bell pepper, chopped
- 1 qt. sugar
- 1 Tbsp. whole cloves
Method
- Chop
- tomatoes and cabbage.
- Sprinkle with salt; cover with cloth.
- Let stand 12 hours.
- Drain liquid off.
- Mix into tomato mixture,
- bell pepper, onions, red pepper, hot pepper, sugar and black pepper.
- Bring to a boil about 30 minutes.
- Do not overcook.
- Add whole cloves.
- Pack in pint jars and seal. Very good with field peas, butter beans and meats.
