Ingredients
- 1/2 lb. grated sharp Cheddar cheese
- 1/2 lb. grated Monterey Jack cheese
- 6 eggs
- 6 Tbsp. flour
- 1/2 tsp. dry mustard
- 1 3/4 c. light cream
- 1 (4 oz.) can chopped green chilies
- 1/4 c. salsa
- jalapeno pepper slices (if desired)
Method
- Preheat oven to 375°.
- Combine cheeses and distribute in a buttered deep dish pie plate.
- Beat eggs with flour, mustard and cream until thick and well blended.
- Stir in chilies.
- Pour over cheeses.
- Bake about 40 minutes, until set and lightly browned. Drizzle salsa over the top and top with jalapeno slices, if desired.
- Cut into wedges after letting sit 10 minutes.
- Serves 4 to 6.
