Ingredients

  • 1/2 lb. grated sharp Cheddar cheese
  • 1/2 lb. grated Monterey Jack cheese
  • 6 eggs
  • 6 Tbsp. flour
  • 1/2 tsp. dry mustard
  • 1 3/4 c. light cream
  • 1 (4 oz.) can chopped green chilies
  • 1/4 c. salsa
  • jalapeno pepper slices (if desired)

Method

  • Preheat oven to 375°.
  • Combine cheeses and distribute in a buttered deep dish pie plate.
  • Beat eggs with flour, mustard and cream until thick and well blended.
  • Stir in chilies.
  • Pour over cheeses.
  • Bake about 40 minutes, until set and lightly browned. Drizzle salsa over the top and top with jalapeno slices, if desired.
  • Cut into wedges after letting sit 10 minutes.
  • Serves 4 to 6.
