- 2 Tbsp. tequila
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. ground cumin
- pinch of cayenne pepper
- 2 1/2 lb. red snapper fillets
- 1 lb. ripe plum tomatoes, finely chopped
- 1/4 c. finely chopped onion
- 1/4 c. finely chopped fresh coriander leaves
- 1 tsp. minced fresh green chili or to taste
- salt to taste
- vegetable oil for grill equipment
Method
- Preparation time:
- 20 minutes plus 1 hour for marinating. Cooking time:
