  • 1/2 c. fresh lime juice
  • 2 Tbsp. tequila
  • 2 Tbsp. extra-virgin olive oil
  • 1 tsp. ground cumin
  • pinch of cayenne pepper
  • 2 1/2 lb. red snapper fillets
  • 1 lb. ripe plum tomatoes, finely chopped
  • 1/4 c. finely chopped onion
  • 1/4 c. finely chopped fresh coriander leaves
  • 1 tsp. minced fresh green chili or to taste
  • salt to taste
  • vegetable oil for grill equipment
