Ingredients

  • 2 c. sugar
  • 3/4 c. oil
  • 3 eggs
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 2 1/2 c. flour
  • 1/2 c. cocoa
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 c. milk

Method

  • In a large bowl, beat sugar, oil and eggs.
  • Add vanilla and zucchini.
  • Mix dry ingredients and add alternately with milk to zucchini mixture.
  • Pour into small (3 1/2 x 6 x 2) loaf pans and bake at 350° for 30 minutes or until toothpick comes out clean. Allow to stand for 10 minutes and remove from pans and cool.
  • You could also bake this in a 9 x 13 pan for 40 minutes at 350°.
