Ingredients
- 2 c. sugar
- 3/4 c. oil
- 3 eggs
- 2 tsp. vanilla
- 2 c. shredded zucchini
- 2 1/2 c. flour
- 1/2 c. cocoa
- 2 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 c. milk
Method
- In a large bowl, beat sugar, oil and eggs.
- Add vanilla and zucchini.
- Mix dry ingredients and add alternately with milk to zucchini mixture.
- Pour into small (3 1/2 x 6 x 2) loaf pans and bake at 350° for 30 minutes or until toothpick comes out clean. Allow to stand for 10 minutes and remove from pans and cool.
- You could also bake this in a 9 x 13 pan for 40 minutes at 350°.
