Ingredients

  • 1 baked pie shell
  • 1 1/4 c. sugar
  • 6 tbsp. corn starch
  • 2 c. water
  • 1/3 c. lemon juice
  • 3 Large eggs, separated
  • 3 tbsp. butter
  • 1 1/2 teaspoon lemon extract
  • 2 teaspoon vinegar

Method

  • Mix sugar and corn starch together in top of double boiler: add in the 2 c. of water.
  • Combine egg yolks with juice and beat.
  • Add in to rest of mix.
  • Cook till thick over boiling water for 25 min.
  • This does away with starchy taste.
  • Add in lemon extract, butter, and vinegar; stir thoroughly.
  • Pour into a deep 9 inch pie shell and let cold.
  • Cover with meringue and brown in oven.
