Ingredients
- 1 baked pie shell
- 1 1/4 c. sugar
- 6 tbsp. corn starch
- 2 c. water
- 1/3 c. lemon juice
- 3 Large eggs, separated
- 3 tbsp. butter
- 1 1/2 teaspoon lemon extract
- 2 teaspoon vinegar
Method
- Mix sugar and corn starch together in top of double boiler: add in the 2 c. of water.
- Combine egg yolks with juice and beat.
- Add in to rest of mix.
- Cook till thick over boiling water for 25 min.
- This does away with starchy taste.
- Add in lemon extract, butter, and vinegar; stir thoroughly.
- Pour into a deep 9 inch pie shell and let cold.
- Cover with meringue and brown in oven.
