Ingredients
- 1 cup tawny port wine
- 2 oz bittersweet chocolate
- 1/4 teaspoon anise extract
- 1 teaspoon ground cumin
- 1/4 teaspoon ground chipotle chili pepper, or to taste
Method
- 1.After searing a substantial meat like beef, lamb, or pork...
- 2. Drain excess fat from pan. Return pan to stove over medium heat.
- 3. Add port, chocolate, anise extract, cumin, and chipotle, swirling around until thickened and reduced by 1/3 to 1/2, about 10 minutes.
- 4. Place seared meat on 4 plates. Drizzle sauce over top and serve.
