Ingredients
- 9-inch pie shell, baked
- 1 1/2 c. sugar
- 1/3 c. cornstarch
- 1/2 tsp. salt
- 3 c. milk
- 4 egg yolks, slightly beaten
- 1 Tbsp. plus 1 tsp. vanilla
- 2 oz. unsweetened chocolate
Method
- Bake pie shell.
- Stir together the sugar, cornstarch and salt in a saucepan (large).
- Blend milk and egg yolks; gradually stir into sugar mixture.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 minute.
- Remove from heat.
- Blend in vanilla and chocolate.
- Immediately pour into baked pie shell; press plastic wrap onto filling.
- Chill pie thoroughly, at least 2 hours.
- If desired, serve pie with sweetened whipped cream.
