Ingredients

  • 9-inch pie shell, baked
  • 1 1/2 c. sugar
  • 1/3 c. cornstarch
  • 1/2 tsp. salt
  • 3 c. milk
  • 4 egg yolks, slightly beaten
  • 1 Tbsp. plus 1 tsp. vanilla
  • 2 oz. unsweetened chocolate

Method

  • Bake pie shell.
  • Stir together the sugar, cornstarch and salt in a saucepan (large).
  • Blend milk and egg yolks; gradually stir into sugar mixture.
  • Cook over medium heat, stirring constantly, until mixture thickens and boils.
  • Boil and stir 1 minute.
  • Remove from heat.
  • Blend in vanilla and chocolate.
  • Immediately pour into baked pie shell; press plastic wrap onto filling.
  • Chill pie thoroughly, at least 2 hours.
  • If desired, serve pie with sweetened whipped cream.
