Ingredients

  • 2 c. unsifted all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. ripe bananas, mashed (3 small)
  • 1/2 c. shortening
  • 1/2 c. chopped walnuts
  • 2 eggs
  • 1 c. Hershey's mini semi-sweet chocolate chips

Method

  • Grease bottom only of a 9 x 5 x 3-inch loaf pan; set aside. Combine all ingredients, except mini chips and walnuts, in a large mixing bowl; blend well on medium speed.
  • Stir in chocolate chips and walnuts.
  • Pour into prepared pan.
  • Bake at 350° for 60 to 70 minutes or until cake tester comes out clean.
  • Cool 10 minutes. Remove from pan.
  • Cool completely on wire rack.
  • Makes 1 loaf.
