Ingredients

  • 1 cup of cake flour
  • 2 cups of sugar
  • 1/2 cocoa powder
  • 1 1/2 cups of egg whites
  • 1 teaspoon of water
  • 1/4 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 cup of heavy whipping cream
  • 1/2 cup of chocolate morsels

Method

  • preheat oven to 400 degrees F
  • sift the flour, 1 cup of sugar and cocoa in bowl and mix together
  • combine egg whites, water and salt in a bowl and beat with a mixer until frothy
  • beat in cream of tartar intil stiff and mix in remaining sugar and vanilla
  • fold in flour mixture
  • pour into tube pan reduce oven temp to 375 bake for 10 min.
  • reduce again to 300 degrees and bake for 35 minutes.
  • let cake cool for 40 minutes upside down.
  • for chocolate glaze, bring cream to a boil, add chocolate chips and stir tull melted, drizzle over cake
