Ingredients

  • 1 lb ricotta
  • 1/4 cup sugar
  • 3 None large eggs
  • 2 tbsp orange liqueur
  • 2 tsp orange zest
  • 3.5 oz dark chocolate chips
  • 1 cup all-purpose flour, sifted
  • 2 tsp baking powder
  • None None Vegetable oil, for deep-frying
  • None None Powdered sugar, for dusting

Method

  • Whisk ricotta, sugar, eggs, liqueur and zest in a large bowl until combined. Stir in chocolate. Add flour and baking powder, stirring until just combined. Refrigerate for 30 mins.
  • Heat oil in a large saucepan over high heat. Deep-fry tablespoons of batter in batches until golden and puffed. Remove with a slotted spoon and drain on paper towels.
  • Sprinkle with powdered sugar and serve warm.
