Ingredients

  • 4 None English muffins, split
  • 3.5 oz baby spinach
  • 2 tbsp tomato sauce
  • 1 (8 oz) can baked beans in barbecue sauce
  • 1 None red pepper, finely chopped
  • 3 None button mushrooms, thinly sliced
  • 2 oz kabanos (Polish) sausage, thinly sliced
  • 2 oz grated mozzarella cheese

Method

  • Preheat oven to 400°F. Line a baking tray with parchment paper. Arrange English muffins, cut-side up, on prepared tray.
  • Place spinach in a heatproof bowl and cover with boiling water. Let stand for 20 seconds, or until spinach wilts. Rinse under cold running water until cool then drain. Squeeze out excess liquid then pat dry with paper towels.
  • Spread tomato sauce over English muffins. Top with baked beans, spinach, pepper, mushrooms, sausage and mozzarella. Bake for 10 mins, or until cheese melts and English muffins are golden brown. Serve.
