Ingredients

  • 1 1/2 to 2 lb. ground chuck
  • 1 c. chopped celery
  • 1/4 c. soy sauce
  • 1 to 1 1/2 c. water
  • 1/4 c. uncooked wild rice
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 c. uncooked white rice
  • 1 can chow mein rice noodles
  • cashew nuts (optional)
  • mandarin orange slices (optional)

Method

  • Brown ground chuck and onion in a 400° oven for 20 minutes, stirring occasionally; drain well.
  • Add celery, soy sauce, soup, water and rice; mix well.
  • Bake, uncovered, in a 9 x 13-inch pan or small roasting pan for 1 to 1 1/2 hours at 325°.
  • Five minutes before removing casserole from oven, top with rice noodles (and, if desired, cashew nuts and mandarin orange slices).
