Ingredients
- 2 large ripe avocados
- 2 large cucumbers
- 2 c. chicken broth
- juice of 2 limes
- 1/4 c. diced green chilies
- 1 c. (1/2 pt.) heavy cream
- salt to taste
- chopped chives (optional)
Method
- Peel and seed avocados and cucumbers.
- Blend avocados with 1 cup of broth until smooth in food processor or blender.
- Stir in lime juice.
- Set aside.
- Blend cucumbers, remaining 1 cup of broth and chilies until smooth.
- Combine with avocado mixture.
- Stir in cream and salt to taste.
- Serve very cold.
- Garnish with chives, if desired.
- Serves 4.
