Ingredients

  • 2 large ripe avocados
  • 2 large cucumbers
  • 2 c. chicken broth
  • juice of 2 limes
  • 1/4 c. diced green chilies
  • 1 c. (1/2 pt.) heavy cream
  • salt to taste
  • chopped chives (optional)

Method

  • Peel and seed avocados and cucumbers.
  • Blend avocados with 1 cup of broth until smooth in food processor or blender.
  • Stir in lime juice.
  • Set aside.
  • Blend cucumbers, remaining 1 cup of broth and chilies until smooth.
  • Combine with avocado mixture.
  • Stir in cream and salt to taste.
  • Serve very cold.
  • Garnish with chives, if desired.
  • Serves 4.
