Ingredients
- 8 qt. peeled fresh tomatoes
- 1 c. salt (plain)
- 2 c. celery
- 2 onions
- 3 bell peppers
- 3 c. light brown sugar
- 6 c. vinegar
- 1 Tbsp. cinnamon
- 1 Tbsp. black pepper
Method
- Chop tomatoes and add salt.
- Drain and let stand overnight. Chop celery, onions and bell peppers.
- Add to tomatoes.
- Cook slowly on stove until celery is done.
- Add last 4 ingredients. Bring to boil.
- Sterilize jars.
- Bottle in sterile jars and adjust lids.
- Process in boiling water bath for 10 minutes.
