Ingredients

  • 1 1/4 cups red wine vinegar
  • 3/4 cup olive oil
  • 1/2 cup New Mexico chili powder
  • 1/3 cup Hungarian sweet paprika
  • 1/3 cup garlic powder
  • 1/4 cup packed brown sugar
  • 2 TBSP salt
  • 1 red onion chopped
  • 3 bay leaves crumbled
  • 2 fresh thyme sprigs
  • 2 fresh rosemary sprigs
  • 1 2lb flank steak

Method

  • Whisk first 7 ingredients in medium bowl to blend. Mix in onion, bay leaves and herbs. Place steak in plastic bag with the marinade mixture. Chill at least 1 day and up to 2. Scrape most of the marinade off the steak and then grill to desired doneness. 4 minutes per side for medium rare. Let stand 5 minutes, cut diagonally.
