Ingredients

  • 2 tsp. olive or canola oil
  • 3/4 lb. ground beef
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 1 (16 oz.) can whole tomatoes or 4 fresh tomatoes, chopped
  • 1 (8 oz.) can tomato sauce
  • 2 garlic cloves, crushed
  • 1 green bell pepper, chopped
  • 1 tsp. dried leaf oregano
  • 1/2 tsp. Italian seasoning
  • 1 (16 oz.) can kidney beans, drained
  • 1 1/2 c. cooked macaroni
  • salt and pepper to taste

Method

  • In a large nonstick frypan, heat oil.
  • Add beef and stir to brown, then add onion, garlic, pepper and celery.
  • Cook about 3 minutes, stirring often.
  • Add tomato sauce, tomatoes (including juice), oregano and Italian seasoning.
  • Cover; reduce heat and cook about 20 minutes.
  • Add beans and macaroni.
  • Cook 4 to 5 minutes until heated through.
  • Season to taste with salt and pepper.
