- 2 tsp. olive or canola oil
- 3/4 lb. ground beef
- 1 onion, chopped
- 2 celery stalks, sliced
- 1 (16 oz.) can whole tomatoes or 4 fresh tomatoes, chopped
- 1 (8 oz.) can tomato sauce
- 2 garlic cloves, crushed
- 1 green bell pepper, chopped
- 1 tsp. dried leaf oregano
- 1/2 tsp. Italian seasoning
- 1 (16 oz.) can kidney beans, drained
- 1 1/2 c. cooked macaroni
- salt and pepper to taste
Method
- In a large nonstick frypan, heat oil.
- Add beef and stir to brown, then add onion, garlic, pepper and celery.
- Cook about 3 minutes, stirring often.
- Add tomato sauce, tomatoes (including juice), oregano and Italian seasoning.
- Cover; reduce heat and cook about 20 minutes.
- Add beans and macaroni.
- Cook 4 to 5 minutes until heated through.
- Season to taste with salt and pepper.
