Ingredients
- 3 to 4 lb. sweet potatoes
- 1 stick butter
- 1/2 box brown sugar
- 1 small can evaporated milk
- 3 well beaten eggs
- 1 tsp. cinnamon
- pinch of salt
- coarsely chopped pecans
Method
- Bake sweet potatoes for 1 hour at 400° or until done.
- Cut in half lengthwise and cool slightly.
- Scoop out potatoes into food processor; add remaining ingredients and mix well.
- Spoon mixture into casserole dish that has been sprayed with Pam.
- Sprinkle top with pecans.
- Bake at 350° for 1 hour.
