Ingredients

  • 1 medium red onion, sliced
  • 1 spanish onion coarsely chopped
  • 1 red pepper, coarsely chopped
  • 6 cloves of fresh garlic, minced
  • 4 tbsp olive oil
  • 4 tbsp butter
  • sea salt and freshly ground black pepper
  • 1 tsp herbes de provence
  • 1 tsp red chili flakes
  • 1 lb lean ground pork
  • 1/4 cup H2O
  • 4 tbsp chli powder
  • 1 can red kidney beans
  • 1 can black beans
  • 1/4 cup frozen corn
  • 1 tbsp Patak's Madras curry paste (or your fave)
  • 1 tbsp Canadian maple syrup
  • 1 tbsp HP sauce
  • 1 tbsp green Tabasco
  • 2 tbsp President's Choice Beer & Chipotle BBQ sauce (or your fave)
  • 1 can tomato paste
  • 1 tbsp dijon mustard

Method

  • heat oil and butter in a giant pot, add both types of onion, salt, pepper, chili flakes and herbes de provence and cook for 10 minutes
  • add garlic and pork
  • cook for 10 another minutes
  • add quarter cup of H2O and chili powder, simmer for 10 minutes
  • add beans, corn, tomato sauce and all remaining ingredients
  • simmer for 10 minutes or longer (the longer the better, next day service is the best) and serve with frshely chopped coriander and sour cream
