Ingredients

  • 2 boneless, skinless whole chicken breasts
  • 1 Tbsp. all-purpose flour
  • 2 tsp. olive oil
  • 1/3 c. chicken broth
  • 2 Tbsp. drained capers
  • 1 Tbsp. parsley

Method

  • Coat chicken with mixture of flour, salt and pepper.
  • Heat oil in skillet over medium heat.
  • Add chicken and cook for 6 to 8 minutes, turning once, until lightly brown and no longer pink in center.
  • Remove to serving platter or dinner plates.
  • Add chicken broth and lemon juice to skillet.
  • Stir over medium-high heat 2 to 3 minutes, scraping up any brown bits in pan until sauce is reduced slightly.
  • Stir in capers and parsley.
  • Pour over chicken.
  • Serve over noodles with sauteed bell pepper (green and red) strips.
