Ingredients
- 2 boneless, skinless whole chicken breasts
- 1 Tbsp. all-purpose flour
- 2 tsp. olive oil
- 1/3 c. chicken broth
- 2 Tbsp. drained capers
- 1 Tbsp. parsley
Method
- Coat chicken with mixture of flour, salt and pepper.
- Heat oil in skillet over medium heat.
- Add chicken and cook for 6 to 8 minutes, turning once, until lightly brown and no longer pink in center.
- Remove to serving platter or dinner plates.
- Add chicken broth and lemon juice to skillet.
- Stir over medium-high heat 2 to 3 minutes, scraping up any brown bits in pan until sauce is reduced slightly.
- Stir in capers and parsley.
- Pour over chicken.
- Serve over noodles with sauteed bell pepper (green and red) strips.
