Ingredients

  • 1 can Chickpeas (15oz Can), Rinsed And Drained
  • 1/2 cups Crunchy Peanut Butter
  • 1/2 cups Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • 1/3 cups Semi-Sweet Chocolate Chips
  • 1/3 cups White Chocolate Chips

Method

  • Preheat your oven to 350°F. Line a cookie sheet with parchment paper.
  • Blend chickpeas in a blender until they have a paste-like texture (don't worry if some small chunks are left).
  • In a large bowl combine blended chickpeas, peanut butter, sugar, vanilla and baking powder. Mash everything together using a big spoon until well combined.
  • Once everything is well combined fold in dark and white chocolate chips.
  • Place tablespoon-sized scoops of dough on the cookie sheet leaving an inch or two between each and bake for 30 minutes.
