Ingredients

  • 4 boneless chicken breasts
  • 2 tomatoes
  • 1/2 bunch fresh tarragon, only the leaves
  • juice 1 lemon
  • 4 TBS olive oil
  • salt, pepper and cayenne
  • 1 tsp strong mustard

Method

  • Cut the tomatoes into thick slices, salt on both slides and leave on kitchen paper to degorge.
  • Preheat oven to 250 degrees C/482 F
  • Cut each breast into 5 or 6 pieces and arrange in a bag made from kitchen foil, cover with tomato slices and tarragon leaves. Sprinkle each breast with 1 TBS of oil and juice of 1/4 lemon. Season with salt, pepper and pinch of cayenne. Close the foil. Cook in oven for 15 minutes.
  • Pour off liquid into dish, mix with mustard and repour over chicken.
