Ingredients
- 4 T EVOO
- 6 garlic cloves
- 1/2 tea. Crushed red pepper flakes
- 2 lbs. medium shrimp, peeled and deveined
- 1/2 tea. Salt
- 6 C broccoli florets
- 1 red pepper, cut into thin strips
- 1/2 med onion, chopped
- 1 lb pasta
- 1/2 C fresh basil, optional
Method
- Bring a covered pot of water to a boil
- Meanwhile, in large nonstick skillet, combine 3 T oil, garlic, and pepper flakes. Cook over med-high heat, stirring for 2-4 mins or until fragrant and lightly golden. Add shrimp and salt. Cook stirring often for 4 mins and transfer to bowl.
- Add remaining oil to skillet. Add broccoli, pepper, onion,and salt. Cook, stirring often for 4 mins. Add 1/4 C water and reduce least to medium. Cover and cook 5-6 mins, adding another T water if needed.
- Meanwhile cook noodles, drain, add a little butter.
- Add shrimp back to veggies and toss. Add to pasta and top with basil.
