Ingredients

  • 1 (1 1/2 to 2 lb.) pkg. skinless, boneless chicken breasts
  • flavored bread crumbs
  • 1 large can plain artichoke hearts
  • 1 Tbsp. tomato paste
  • 3 scallions
  • 1 pkg. fresh sliced mushrooms
  • 1/2 tsp. crushed rosemary
  • paprika
  • fresh ground pepper

Method

  • Cut chicken into bite-size pieces.
  • Shake and dip in bread crumbs; brown in butter in frypan over medium heat.
  • Place golden browned chicken in 13 x 9-inch baking casserole.
  • Put cut-up artichoke hearts and sliced mushrooms over chicken.
